When all have fallen, approach Valentino and use an Enviromental Takedown on the table he's hiding behind (X and Square on PS4). He can't be attacked just yet, even if you stun him, so focus on the Dollotrons and keep deflecting his projectiles as you take out the remaining enemies.
Counter each individual throw to stun Valentino, letting you focus on the next wave of Dollotrons. Once you've defeated the first wave, Valentino will join the fight, throwing cleavers at you. The easiest way is to just do a ground take-down (R2 and Triangle on PS4). In order to take them out you'll need to either perform ground or special takedowns, Enviromental takedowns, or very lengthy Beatdowns. He'll let loose his "Dollotrons" which are heavily pain resistant enemies. Head through the door and descend into the lower levels until you confront your foe - Professor Pyg, aka Lazlo Valentin. Once you have obtained the location of Valentin's hideout, drive the Batmobile into the lower level of Founders' Island until you find a beauty parlor and enter it.
